We start with a harvest plan in which we project harvest dates and tonnages, set our style goals, develop vinification protocols, order needed supplies, determine facility and lab capabilities in preparation. I coach vineyard monitoring and determine picking dates in coordination with team members.
Then reality hits. Generally no plan survives, so we adapt on a daily basis. Each lot is analyzed for needed adjustments of water and acidity. We track primary and secondary fermentations to completion.
Then I taste samples and prescribe oak and other cellaring, and consider blending options with a goal to have the vintage stable and buttoned up by Christmas.
On-site visits are extra, charged at $1,000 per day on site plus travel expenses.
